Margarita Pie

Looking for an easy, refreshing dessert to make on a hot summer day?  Frozen Margarita Pie is just the ticket!  It has a tart lemon/lime flavor from margarita mix powder, but doesn’t actually contain alcohol so the kids will love it too.  I like to make it in small dessert cups so I can pull out just what I need, but you can also use a graham cracker crust and make it as a whole pie.

Ingredients:

8 oz cream cheese

8 oz Cool Whip

2.5 Tbsp dry margarita mix  (Holland House, Ready Rabbit, and Lasco are brands that I have tried and work well)

1/4 cup granulated sugar

splash of lemon juice

1 cup graham cracker crumbs

1 Tbsp butter, optional

Step 1:

Mix softened cream cheese with the margarita mix, sugar, and lemon juice in a medium sized mixing bowl until well blended.

Step 2:

Add in Cool Whip and mix gently until well blended.

Step 3:

Add 1 heaping tablespoon of graham cracker crumbs to the bottom of each dessert cup.  If desired, you can mix 1 tablespoon of melted butter into the crumbs before dividing into the cups to help it stick together better.  It tastes good either way!

Step 4:

Divide the cream cheese/Cool Whip mixture evenly into the 8 dessert cups and spread on top of the graham cracker crumbs.

Step 5:

If desired, you can add a sprinkling of graham cracker crumbs to the top of each dessert cup for garnish.

Step 6:

Cover each cup with plastic wrap and freeze for 4 hours or overnight.  You can eat it frozen or allow to thaw for about 15 minutes if you like a softer consistency.

Notes

This dessert is refreshingly light and tart!  The great thing about the small dessert cups is that you can pull one or more out of the freezer whenever you need them.
You can also make a lower calorie version of this recipe by substituting light versions of the cream cheese and cool whip.
Alternative presentation:  you can put the filling into a graham cracker pie crust and make a whole pie rather than individual dessert bowls.

    • Hi Sandi, Individual portions is one of the things I like too. If you can manage to just eat one at a time then they can last up to a few weeks in the freezer!
